Succulent Squash And Zucchini Side Dish

My garden this year produced massive amounts of yellow squash and zucchini. I’ve been making all kinds of things with these vegetables including like a bazillion zucchini breads. I have even been giving a lot of the veggies away because I have such a surplus built up, it’s crazy! What I really wanted to do was make something simple yet savory as a side dish for dinner and that’s when I happened upon this great recipe.

 

I love how well this squash, zucchini and potatoes side dish turns out. It tastes clean and fresh and provides a lot of nutrition at dinner time. I have even eaten this dish for lunch. Quick Tip: If you prefer, use sea salt rather than table salt when cooking your veggies.
