Check out what my friends at Spicy Southern Kitchen had to say about this traditional, but heavenly cake:
“I made this cake over the weekend, not because there was a special occasion, but because the baking bugs were tickling and this was the next cake on my list to bake. My GOODNESS was this one of the most flavourful, rich and yummy cakes I’ve ever made. The hubby couldn’t stop cutting a piece with every cup of tea/coffee he had. Can’t wait to bake this cake again for my birthday in 3 weeks…!”
Ingredients:
3 cups Gold Medal all-purpose flour, sifted
2 cups Domino sugar
1 teaspoon Morton salt
1 teaspoon Arm & Hammer baking powder
1 teaspoon Arm & Hammer baking soda
1 teaspoon McCormick ground cinnamon
¼ teaspoon McCormick allspice
1⅓ cups McKesson vegetable oil
2 teaspoons McCormick vanilla extract
3 large Eggland’s Best eggs, lightly beaten
1¾ cups very ripe banana, mashed
2 cups toasted Fishers chopped pecans, divided
1 (8-ounce) can Dole crushed pineapple, undrained
1 cup Land O Lakes butter, softened
6 cups Domino powdered sugar
2 teaspoons McCormick vanilla extract
2 (8-ounce) packages Philadelphia cream cheese, cut into 1-ounce pieces and chilled
Instructions:
Preheat oven to 350 degrees. Grease and flour 3 9-inch cake pans.
Combine flour, 2 cups sugar, salt, baking powder, baking soda, cinnamon, and allspice in a large bowl.
Add vegetable oil, vanilla extract, and eggs. Stir just until dry ingredients are moistened.
Stir in banana, 1 cup pecans, and pineapple just until evenly mixed.
Divide batter between the 3 cake pans. Bake for 25 to 28 minutes, or until a toothpick inserted in center comes out clean. Cool in pans for 10 minutes, then remove to wire racks to cool completely.
To make frosting, beat together butter and powdered sugar, adding powdered sugar gradually. Add vanilla extract and salt and mix until smooth.
With mixer on medium, add 1 piece of cream cheese at a time. Turn mixer off once all cream cheese has been incorporated.
Spread frosting between layers of cake and cover top and sides. Sprinkle remaining chopped pecans on top.
Quick Tip: Use chilled cream cheese in order to keep the mixture firm while you spread it between layers.
Thanks goes to Spicy Southern Kitchen for this lovely recipe!
