Would you believe that this Crazy Depression Cake recipe doesn’t even use any milk or eggs? And it bakes in 35 minutes. I must be out of my mind, because such a thing just doesn’t exist – right? A cake is supposed to be a little difficult to make and it is supposed to take a lot of time. Especially if you’re trying to make one without eggs.
Yes, it is a bit crazy. I have to admit, I was a little skeptical when I had a look at this recipe, worried that it might turn out a bit dry or, well, just a bit “off.” I was pleasantly surprised, to say the least. And having no extra bowls to clean up–awesome! Kudos to the people living during the Great Depression who made such clever and effective use of the limited resources that they had available.
