I just wanted to let you know that I made this casserole for dinner last night and it was so easy and so good! My whole family really enjoyed it and now they think I’m awesome. So thank you! You make me look awesome.

  • 1 (10 3/4 oz) can condensed cream of chicken soup with herbs
  • 1 (8 oz) container of sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 (28 oz) package frozen diced hash brown potatoes with onions and peppers, thawed
  • 2 cups shredded rotisserie chicken
  • 1 cup crushed croutons
  • 1 tbsp butter, melted
  • fresh thyme (optional)

Preheat oven to 350 degrees F. Spray a 3 quart casserole dish with non-stick spray.

Combine the condensed soup and sour cream, whisk until smooth. Add in the cheese, hash brown potatoes and chicken. Stir well and pour into the prepared casserole dish.

Combine the crushed croutons with the melted butter and sprinkle over the top of the casserole. Bake, uncovered, for 40-50 minutes or until heated through and center is bubbly.

Quick Tip: Garnish with fresh thyme before serving!
