Whenever I can find a casserole recipe that takes only a few minutes of prep time, I know it’s going to end up on my Top 5-list! I absolutely love meals that I can literally just throw together. And somehow these “quick meals” always taste incredibly delicious as well!

Ingredients
- 1 (10 3/4 oz) can condensed cream of chicken soup with herbs
- 1 (8 oz) container of sour cream
- 1 1/2 cups shredded cheddar cheese
- 1 (28 oz) package frozen diced hash brown potatoes with onions and peppers, thawed
- 2 cups shredded rotisserie chicken
- 1 cup crushed croutons
- 1 tbsp butter, melted
- fresh thyme (optional)
Instructions:
Preheat oven to 350 degrees F. Spray a 3 quart casserole dish with non-stick spray.
Combine the condensed soup and sour cream, whisk until smooth. Add in the cheese, hash brown potatoes and chicken. Stir well and pour into the prepared casserole dish.
Combine the crushed croutons with the melted butter and sprinkle over the top of the casserole. Bake, uncovered, for 40-50 minutes or until heated through and center is bubbly.
