Great recipe, I made a peanut butter frosting to top it, and it was moist and delicious. The family enjoyed it.
I just made this cake today. Very very good and moist. Only thing I noticed was it didn’t seem to be quite as sweet as I like. I think when I make again I will add a bit more sugar. Otherwise spot on. Very good cake. Will definitely be making this again.
Ingredients
- 1/4 cup butter, softened
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1/2 teaspoon vanilla
- 2 large eggs, slightly whisked
- 1 cup flour
- 1/2 cup cocoa
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup ripe bananas, smashed
chocolate cream cheese frosting
- 2 ounces cream cheese, softened
- 1/4 cup butter, softened
- 2 tablspoons heavy cream
- 1 tablespoon cocoa
- 2 cups powdered sugar
Instructions:
Preheat the oven to 350 degrees. Spray an 8×9″ baking dish with cooking spray.
Combine the butter, sugars, vanilla and eggs until smooth and creamy. In a separate bowl combine the dry ingredients and whisk well. Alternating between the dry ingredients and banana, add a little of each to the butter mixture, mix a little and then add a little banana, and back and forth until you’ve used everything up.
Bake for 20-30 minutes, check with a toothpick.
Let cool a little while you make the frosting.
Frosting
Combine the cream cheese, butter, heavy cream, cocoa and powdered sugar. Pour over the slightly warm cake and gently frost the top.
Quick Tip: Serve with a glass of milk!
