I don’t know about you, but I always like to cook soup when the weather gets colder. Somehow a good soup makes me warm immediately – pork chops don’t seem to do that, or casseroles!
This is one of my favorite soup recipes because it’s so simple and doesn’t require much effort! I like to change it up by adding more veggies – I love broccoli so I usually add at least that.
Ingredients
- 1 large Onion, sliced
- 2 Carrot, sliced
- 2 Celery Stalks, sliced
- 4 ounces Mushrooms
- 2 teaspoons Salt
- 1/2 teaspoon Pepper
- 1/4 teaspoon Thyme
- 1 tablespoon Parsley
- 10 ounces Peas, frozen
- 3 Chicken Breasts
- 5 cups Water
- 3 cups Noodles
Instructions:
Place all ingredients in a slow cooker, except the noodles.
Cover and cook on low for 8 hours or hight for 4 hours.
Add noodles.
Cook on high another 30mins to one hour until noodles are cooked.
Quick Tip: Store leftovers in the fridge in an air-tight container for approximately 2 days.
