I’ve found plenty of really good banana bread recipes over the years, but it’s not that often that I run into a banana cake. So when I found this one I just had to give it a go. It looked so good and it sounded good – I figured it would turn out ok. I was wrong. It didn’t turn out ok – it turned out fabulous!
This one’s an absolute keeper folks! Topped with a delicious homemade cream cheese frosting and garnished with toasted coconut, this banana cake has a beautiful and tasty appeal. The super soft and moist consistency makes this one a keeper in itself. If you are looking to bake a cake for someone special or just because, you won’t go wrong with this banana cake.
Don’t be afraid to slice it up for breakfast with some coffee; there’s bananas in it so that makes it ok, right?! Bananas are healthy with lots of vitamins… And the frosting? Well, it may not exactly be health food but it sure makes you feel good to start your day with such a delicious treat!
