Fall is my favorite season. After all those hot summer days I’m totally ready for cooler weather. When it gets crisp and fresh outside I tend to move on to recipes that will warm me up on those chilly evenings. This is one of those recipes, and it doesn’t take much to get it done!
Super simple to make, delicious and nutritious, this 3 bean chicken chili with cheesy cornbread topping is the weeknight meal you’ve been looking for. Ground chicken lightens up this dish and black beans, cannellini beans, and kidney beans add that bulk of fiber you’re looking for.
Use boxed corn muffin mix for a sweet topping for a flavor combination you will love. This recipe serves 12 and is ready in under an hour, for a quick and flavorful dinner.
