One Pot, Midweek, Buffalo Chicken…Perfection!

I am someone who takes great pride in my work. I work in an office, and to some that may be boring, but to me it’s my  livelihood. I always try to do my best, no matter what job my boss throws at me. I like to think that everyone around me has the same kind of work ethic. I think for the most part, they do. It shows because every time we have high performance marks, our boss lets us have a lunch together in the lunch room, which is unheard of otherwise.

During one of these luncheons, they actually got someone to cater in some food, and it was incredible. My favorite thing on the buffet line was the shredded buffalo chicken.

It was just like this stuff from the recipe on Spend with Pennies. After eating it at work, I couldn’t wait to go home and make it for my family. They loved it just as much as I did.

It was so easy to prepare too. It just took one pot. I tossed everything in and let it cook itself. After a short relaxation period on the couch, dinner was done!
