Jaw-Dropping Chicken And Rice Casserole

My mom called the other day and informed me that her and my father were on their way towards our house, from Florida. They didn’t even tell us they were planning a trip, and here they were on their way?!! I was overjoyed at the thought of seeing them, but a little frazzled at the fact that I wasn’t ready for visitors. The house was a mess, I hadn’t gone grocery shopping that week yet, and our schedule was booked solid.

They told me not to worry about the kids games and stuff, they were going to come and watch too. They are always great guests, so I wasn’t concerned about them being unhappy with the presentation of the house.

I did want to be able to feed them though. I pulled out my simple chicken and rice casserole recipe just like this one from Spend with Pennies and got to work in the kitchen.

By the time dinner came out of the oven, they were pulling in the driveway. It was an awesome way to spend their first part of the visit. Good food, great company!
