Annie’s Hot Mediterranean Soup With Turkey Meatballs

This recipe is perfect if you want a nice dinner waiting for you while you go and accomplish all of you tasks or errands for the day. This hearty soup is the answer to your ordinary evening. This will truly make your ordinary night special. Just pair if off with crusty bread and it’s a full meal!

I warm, flavorful soup waiting for me after a long stressful day? Sounds like my favorite type of “coming home”. It just feels nice knowing that when you come home, there is a warm dinner waiting for you to devour and enjoy. It’s already an added bonus if it’s delicious too.

 

 

Ingredients

1 Medium Onion, Chopped

1 clove Garlic, Minced

2 Medium Carrots, Diced

14 ounces, fluid Great Value Canned Garbanzo Beans, Drained And Rinsed

4 cups College Inn Chicken Broth

28 ounces, fluid Hunt’s Canned Fire Roasted Diced Tomatoes

8 ounces, fluid Hunt’s Canned Tomato Sauce

½ teaspoons McCormick Dried Oregano

1 Tablespoon Lemon Zest

½ teaspoons Morton Salt

¼ teaspoons McCormick Pepper

12  Farmrich Frozen Turkey Meatballs

1 cup Orzo

⅔ cups Green Giant Baby Spinach Leaves

 

 

Instructions

Combine all of the ingredients, except for the orzo and spinach, in a 5- to 7-quart slow cooker. Cook on low 6–7 hours or high 3–4 hours.

One hour before serving, stir in orzo and baby spinach. Continue cooking until orzo is al dente and spinach is wilted. Serve warm!
