I’m going to be perfectly honest here. This is probably not the leanest or lightest recipe on the planet, with all that wonderful gooey cheese on top of the chicken. But that’s ok – I can live with that, because this is so delicious I don’t even care if it’s going to stick to my thighs! And if I’m even more honest with you, I didn’t think I would like this too much. I do eat onions but they’re not my favorite ingredient. That’s why using French onion soup in this recipe made me a little hesitant.
Fortunately my husband saw me going through the ingredient list and he immediately asked if we could have this for dinner. He’s a big fan of onions, so he’s always eager to try anything with onions in it! I said “Sure!” even though I really wanted to say “Are you sure?” – but now I’m glad I did, because this made a superb dinner!
