To me, winter has always been the perfect season to make all kinds of soups. Potato soup, chicken soup, spicy veggie soup – you name it, I’ve tried it! I just think a steaming hot bowl of soup is the best kind of comfort food on a grey and chilly day. And usually soup is also very easy to prepare, which makes it the perfect meal on a busy weeknight.
Now, I love cauliflower. I’ve always enjoyed it so it has been difficult for me to understand that some people just can’t stand it at all! My husband is one of those people… Every time I try to add cauliflower to a dish, he cringes. He doesn’t really complain, but I can see he’s not too happy about it! This time I decided to take the risk and made this cauliflower soup. It turns out he was crazy about it! It must be the brown butter that makes this soup so delicious he couldn’t resist going for seconds.

Quick Tip: Store remaining soup in an airtight container in the fridge or allow to cool completely and seal in a ziploc in the freezer for up to 1 month.
