Not-Your-Ordinary Stuffed Shells

This recipe has been such a great hit over at The Girl Who Ate Everything. It has received a lot of wonderful comments! Here’s what lovely readers have said about it:

I love stuffed shells. This version takes the shells up a notch for being kid friendly without leaving the adults out. Well done.

Anything Pizza is hubby’s middle name so I know we will absolutely love these.
I like the idea that these can be made ahead of time and frozen. I like the ‘make-ahead’ meals for future use.

Ingredients

  • ½ lb sausage
  • ½ teaspoon minced garlic (or use dried garlic powder if you don’ have fresh)
  • ½ cup chopped pepperoni
  • 16 oz cottage cheese
  • 1 teaspoon Italian seasonings
  • 2 cups shredded mozzarella cheese, divided
  • 25 jumbo shells
  • 1 (26-oz) jar spaghetti sauce
  • (optional) grated Parmesan for topping

Instructions:

  • Preheat oven to 375 and spray a 9×13-inch pan with cooking spray.
  • Cook jumbo pasta shells according to package. Drain and cool.
  • Brown the sausage in a pan. Add the garlic for the last minute of cooking. Drain sausage.
  • Combine sausage, pepperoni, cottage cheese, Italian seasonings, and 1 cup of the mozzarella cheese in a bowl.
  • Stuff pasta shells with cheese mixture and place in baking dish. Top with spaghetti sauce and remaining mozzarella cheese. Freeze here for later if making ahead of time.
  • Bake for 25-30 minutes or until bubbly. Sprinkle Parmesan on top if desired.

Quick Tip: You can use the leftovers of your own spaghetti sauce instead of using store-bought.
