Black and White Has Never Looked so Good

Who would have thought a can of soda could help you make a lighter and healthier cake? Well, it really can. Leaving out the eggs and butter will give you a different texture than a regular cake, but it’s super delicious and you woulnd’t even know it’s a “diet version”!

 

 

Ingredients

  • For the Cake
  • 1 chocolate fudge cake mix
  • 1 (12 oz.) can Diet Coke
  • Frosting
  • 1 (4.2 oz.) pkg. Cookies ‘n Cream Instant Pudding Mix
  • ½ c. low-fat milk
  • 1 tsp. vanilla, opt.
  • 1 (8 oz.) carton light or fat-free Cool Whip, thawed
  • 9 mini OREOS, chopped, opt.

 

Instructions:

Preheat oven to 350 degrees. Spray a 9×13-inch baking dish with cooking spray; set aside. Combine the dry cake mix and the Diet Coke. Whisk together but do not over mix. Bake for 25-28 minutes or until a toothpick inserted in the center comes out clean. Cool completely.

Whisk together the dry pudding mix, milk and vanilla until combined. Fold in half of the Cool Whip and then fold in the remaining half of the Cool Whip. Spread over cake. Garnish with chopped Oreos, if desired.
