A Lazy Cook’s Way To An Amazing Chicken Dinner!

Whenever I didn’t feel like cooking, I didn’t force myself to do it. I would just reach into the magical pile of takeout menus that we had and pull one out. Calling in to place an order was so much easier than standing in the kitchen for hours trying to get something ready for the family when all I wanted to do was relax after a hard day at work. As I got a little bit more comfortable with my job, I would start experimenting with recipes that were kind of easy, just to save ourselves the big hefty bill that came along with those dinners.

This salsa chicken was one of those recipes that I found early on and hung on to. There aren’t many ingredients and you basically just dump everything together and toss it in the slow cooker. The best part for me was that my family actually liked it. I have never been much of a cook, but this one seems to work!

So, on those days when I’m feeling extra lazy, this is a recipe that I reach for instead of one of those expensive takeout menus. My kids don’t even complain when they know this is for dinner. They know it’s going to be good!
