Carrot And Cucumber Salad With A Touch Of Sweet And A Bit Of Sour… Perfect!

When we first moved into our house, I was so excited to put a garden in. My husband had purchased a rototiller for us, and I think he was a little too excited to use it. He went a little bit overboard with the size of the garden, and then I of course had to fill it up. As an end result, we had way too many vegetables. Well, technically I don’t think you can ever have too many fresh veggies. I go out there and just eat them right off the plant. I couldn’t eat my way through the whole garden though.

I found this recipe on Group Recipes and I couldn’t believe how many items from my garden I could use up in here. It took a big dent out every time I made it, which was pretty frequently last year.

With all the BBQs and potlucks that we go to in the summer months, this is a great way to share what I have grown all on my own. You can’t get any fresher than your own backyard!
