If Summer Had A Flavor… This Tomato Pie Would Be It

My Grandma loves fresh tomatoes. She loves them so much in fact, she can eat them plain. Now, I like tomatoes, but I’m not that crazy about them. There is even a specific tomato stand that’s a few miles out of town that she will drive to because she knows those are the best tomatoes around. So, for her birthday last summer, I drove to that stand and got her some of her favorite tomatoes. I didn’t just want to take her a bag of tomatoes though, I had to make something with at least a few of them.

I stumbled upon this recipe for a tomato pie on Spend With Pennies and printed it out instantly. I knew she was going to love it, and so was I. I whipped it together and gathered up her gifts and headed to her house. She was so surprised. We sat down and started munching.

We sat and ate that entire pie and talked for hours. It was a great memory of my Grandma that will stick with me for the rest of my life, thanks to this recipe!
