One-Pot Southwest Chicken: A Meal The Whole Family Can Agree On

We were hosting a BBQ for summer kick-off, and my sister and her family were coming. It was fantastic! There was only one problem. We are red meat eaters at our house, so the grill was going to be full of steaks and burgers. It made my mouth water just thinking about it. My sister on the other hand, doesn’t like red meat… at all. She would choke down a hot dog if she had to, but I wanted her to be able to enjoy the party as much as the rest of us, and that meant a good meal.

I started thinking about what I could do with chicken, and came across this recipe on Mel’s Kitchen. It only required one pot so that was perfect right off the bat. I knew that we weren’t going to have any room on the grill, and I didn’t want a bunch of extra dishes in the house either.

She was so surprised and grateful that I had prepared her something extra. I took a little piece off of her plate and it was delicious! She ate the whole thing, so she must have thought the same thing.
