Hungry Enough To Eat A Horse Chicken Noodle Casserole

Noodle casseroles were a weekly staple at our house growing up. We would have beef and noodles, tuna and noodles, pork and gravy with noodles… any kind of meat that was on sale, basically is what Mom would mix in with pasta and some sauce or gravy of some kind. I didn’t understand the whole appeal to it until I was living on my own and looking for something to make for a hungry family. These kinds of casseroles go a long way, they are cheap, and for the most part, you can’t really mess them up.

Mom’s favorite was always tuna noodle casserole. I like it, but it wasn’t the best. I always thought that it could be better. All Recipes offered me the recipe that I had been looking for since my childhood. It was a noodle casserole just like the tuna one, but with chicken… well that’s awesome.

I make this for the family all the time now. My kids can’t get into the tuna casseroles, but with chicken, they scarf it right down. Even my husband who doesn’t prefer casseroles at all really likes this.
