Potato Junk Casserole

When my husband and I first moved in together, I was embarrassed a bit of my cooking skills, or lack there of. I really didn’t know how to make much of anything. Not that my mom never tried to teach me, because bless her heart she tried at every turn. I just never really had much interest in it. That was, until I realized that I was going to have to feed a family. That first couple of weeks I kind of faked my cooking abilities by whipping up some boxed dinners and doing frozen pizza, but soon my new husband was getting tired of that, and catching on to what I was doing.

So, one weekend when he was going to be gone golfing with his buddies, I went over to my mom’s for a crash course in cooking. One of the dishes that she said I couldn’t go wrong with were these potatoes. It was without a doubt the easiest thing that we made that day.

The dish was very similar to this one from I Wash You Dry. It was also the first recipe that I did when the hubby got home. He was more than impressed with these, and now he requests them all the time. It’s so simple, I don’t mind making them just about whenever he asks.
