You’re Going To Want At Least Two Bowls Of This Soup!

One of my very best girlfriends in college was going to be having a baby! We were super excited for her and couldn’t wait for the special day. When she announced that she was having a baby shower around St. Patrick’s Day, I knew what that meant. Her Grandmother had very strong Irish roots, and she was going to be doing all the cooking. I was pumped up to say the least. I had eaten at their family gatherings before and it was always amazing.

When we showed up at the party, I was shocked to find out that there was only one big kettle of soup on the table. It was a big kettle, so there was going to be plenty to go around, I just didn’t know what it was. It ended up being this amazing corned beef, cabbage, and potato soup.

It looked a lot like this recipe that I found on Noshing With The Nolands. The shower turned out really nice, she got a lot of great gifts for her baby. I went back and had seconds and a small portion of thirds of the incredible soup that her Grandma made.

Now, that I’ve found the recipe, I make this at home whenever I can find a good deal on corned beef. My husband can’t get enough of it.
