Sandra Lee’s Winner Mexajita Chicken Recipe

One of my husband’s and mine’s common friends once told us that we were probably Mexicans in a past life because of the way we devour Mexican food. He may or may not be correct, but my husband and I just appreciate amazing food. We’re both obsessed about Japanese food too most especially sushi and tempura, so we might have been Japanese in a past life. Life with common friends will never be boring. Since they know both my husband and I very well, it’s easy for them to tease us all the time.

We will not admit it to that certain friend, but after that get-together, my husband and I both decided to make Mexican food the next day. Well, our taste buds were triggered. We suddenly craved for Mexican food so bad we wanted our fix the next day.

Since we both have work, I had to decide on a slow cooker recipe. My trusty slow cooker has never let me down. I was the one who let it down when I first used it years ago, but that’s a story for another day.

Luckily, I found this Mexajita chicken recipe from Food Network by the amazing Sandra Lee. It’s so flavorful and so over-the-top that my husband and I were more than satisfied for dinner that night. Oh my goodness- you have to try this or else you will miss an amazing recipe!

Quick Tip: When serving, put it over steamed rice, and top it with shredded cheddar cheese, cilantro, and a dollop of sour cream.
