Super Easy And Yummy All-In-One Chicken Potato Salad

I have just been on a potluck with a few of my childhood friends. They do potlucks differently- there’s always a theme that we needed to cater to. The theme this time was “Picnic Basket” so we had to bring dishes that we could serve during picnics. I brought fried chicken because what could be more picnic-y than fried chicken? Some of them had brought sandwiches and brownies while some had brought pies and coleslaw. It was a pretty fun potluck that made us reminisce of childhood picnics by the lake in our hometown.

I enjoyed that time with my friends, and of course the food. I had almost forgotten that my friends were really good cooks and could make the best ones out there. I particularly loved the dessert and the potato salad.

I must have been the one to eat most of the potato salad because I missed Mom’s version. Then I realized it had been so long since I prepared such a salad at home. It has always been green salad lately.

I came home to my family with the thought of making a chicken potato salad the next day. My husband’s face was a sight to behold- he looked like a happy kid. He had always loved my potato salad, which is reminiscent of my Mom’s.
