This Simple Noodle Recipe Is Simply Tunarrific!

I rarely cook tuna for the family. First of all, we all have a bit of a bias- we love salmon more than any other fish in the world. In fact, I don’t think I have cooked anything lately other than salmon. However, tuna is also a flavorful fish, which can transform an ordinary dish into something special. The thing about tuna is that it’s pretty much a simple fish that requires simple ingredients to make it taste special. You don’t need to find out-of-this-world ingredients or employ difficult methods just to give this tuna a delicious makeover.

When I was a kid, my favorite tuna recipe was my Mom’s tuna salad and my Dad’s tuna stew. Mom’s tuna salad was composed of mayo, potatoes, shallots, and tuna pieces. Dad’s tuna stew was made from tamarind which was why it’s so sour, but it tasted good with rice.

In my family, they appreciate the tuna salad. My husband and my kids love eating them with bread, like a sandwich, with a side dish of roasted potato wedges and salad. It’s pretty tasty most especially if spread between two toasted breads.

Quick Tip Use a sturdy pasta shape like rigatoni or wide yolk-free noodles like Manischewitz brand, and don’t stir this dish once you put it in the slow cooker — otherwise the noodles tend to break apart.
