Its Name Might Be A Bit Sad, But These Funeral Potatoes Make Everyone Happy!

This funeral potatoes recipe is good for a large crowd. My aunt often makes this for us during our family reunions. She serves this for snacks instead of as a side dish. She still calls it hash brown casserole for the sake of the kids, and often throws me a knowing look. Yes, she is that aunt! Anyway, however you like to call this amazing potato dish, you will still love its taste! We have Stock Piling Moms to thank for this dish.

Funeral Potatoes are an amazing side dish and so easy to prepare.  They taste similar to the recipe for Crockpot Hashbrown Casserole.  This recipe for creamy, cheese potatoes is perfect for a large crowd or party.  It will definitely feed a hungry crowd with no problem at all.”

My friends love this dish. When I don’t have time to prepare something for them, this is what I serve. It’s easy and convenient to make, and it tastes amazing too!

 

Ingredients

  • 2 packages (12 oz.) Great Value Southern Style Frozen Hash Brown Potatoes
  • 1 cup Daisy sour cream
  • 1 can Campbell’s cream of chicken soup
  • ½ cup Land O Lakes butter melted
  • 1 tsp. Morton salt
  • 1 tsp. minced onion
  • 2 cups Sargento shredded cheddar cheese
  • 2 cups Kelloggs Corn Flakes, crushed and mixed with ½ cup melted butter

 

Instructions

  1. Place your potatoes in a colander.
  2. Let set until thawed and drained.
  3. Combine sour cream, soup and butter in a bowl; Mix it well.
  4. Add salt, onion and cheese to this mixture and mix until all combined.
  5. Add potatoes to mixture and stir until all combined.
  6. Place in 9×13 pan.
  7. Sprinkle on butter covered crushed Corn flakes.
  8. Bake uncovered at 350 for 40-50 minutes.
