Leave The Simple Carbs At The Door With This Protein-Packed Breakfast Sandwich

This sandwich is very simple to make and only uses fresh, high-quality ingredients that are meant to keep you going strong throughout the day. The bread in this recipe is whole grain and filled with complex carbs that have low-impact on your glycemic index. Perfect for those watching their intake of carbs.

My husband and kids totally loved these breakfast sandwiches and made them to order. Such a versatile recipe!

 

Wow! What a wonderful sandwich this is! I love how healthy it is and all of the fresh ingredients that are inside of it. Total yum fest going on!

 

Ingredients

2 slice good quality multi-grain bread, toasted

2 fried egg(s)

cup or partial pkg. of baby spinach or frozen spinach cooked

ripe avocado sliced

2 slice Kraft provolone or mozzarella cheese

1 pinch of Morton sea salt and ground black pepper on each half sandwich

1 pinch*grated lemon rind in spinach when cooking it,and some to sprinkle on to, when no tomato is used.

Meat of choice (We used bacon)

Instructions

Toast the bread, microwave the spinach, slice tomato and peel if necessary, slice avocado.

Fry meat. Set aside. You’ll top your sandwich with it.

Fry one or two fresh eggs to desired taste, place on top of toast, top with mozzarella.

Top with tomato slices, or spinach and grated lemon, avocado.

If you place the cheese on top, then microwave one minute or less, checking to see when cheese is melted. Broil if preferred until golden and cheese is melted enough….
