5 Cookie Recipes That’ll Leave You Speechless

Check out what my friends at Skinnytaste had to say about these PB&J Healthy Oatmeal Cookies:

“Hi, I didn’t have bananas, so I added same amount of a ripe papaya and 1/8 c. of brown sugar, topped with orange marmalade. WOW, had it with English tea. So good!”

Yes! That’s the greatest thing about this recipe. You can switch it up however you like with the fruits and jelly. I made this for my daughter and her friends on short notice when they decided to have a tea party this summer. It was adorable and they all loved them.

Ingredients

2 medium ripe bananas, mashed

1 cup of uncooked Quaker quick oats*

2 tbsp JIF chunk peanut butter (I like the texture)

4 teaspoons Welch’s reduced sugar jelly in any flavor

Directions

Preheat oven to 350°F.  Spray a non-stick cookie sheet with cooking spray

Combine the mashed bananas and peanut butter in a medium bowl. Add the oats and mix until thoroughly combined. Place batter by tablespoons (little more than level) on the cookie sheet, making an indent with the back of the measuring spoon. Repeat until you have 16 cookies.

Bake 15 minutes or until golden. Remove from oven and top each with 1/4 teaspoon jelly.

Quick Tip: Gluten free oats makes these easily a gluten free treat.
