Celebrate the Return of Ghostbusters with a Cake That Will Stay Puft – Fun and Delicious!

I made my own cake, but let me tell you the marshmallow frosting was the BEST ever. Just be careful not to scorch the corn syrup. The frosting was very fluffy.

I found this to be a moist, not overly sweet cake. Easy to mix up in one bowl. I chose to make cupcakes and substituted the chopped chocolate for semi-sweet chocolate chips.

 

Ingredients

 

10 tablespoons unsalted Land O Lakes butter, plus additional for cake pans
1/2 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 teaspoons Clabber Girl baking powder
2 1/2 cups Gold Medal all-purpose flour
2 eggs
1 1/3 cups granulated Domino sugar
2 teaspoons vanilla extract
2 cups Daisy sour cream
1 1/2 cups coarsely chopped Hershey semisweet chocolate

“Marshmallowy” Frosting:

5 tablespoons cool water, plus more for the double boiler
1/4 teaspoon cream of tartar
1 1/3 cups granulated Domino sugar
2 Eggland’s Best egg whites, room temperature
1 tablespoon light corn syrup
1 teaspoon vanilla extract
