Add A Little Spinach To Make The PERFECT Grilled Sandwich

The first time I made these at home, my kids wouldn’t touch them…”Spinach Mom?!?” Then, after I made them a few times and I kept bragging up how good they were, of course they wanted to try a bit. They loved them just as much as I do. Thank goodness! We don’t have many meals that we agree on so when I find one it’s pretty darn exciting. I make these at least a few times a month, if not more. They are nice for a lunch all by themselves or I will pair them up with a pasta or potato for dinner. Super simple and super fast.

If you like ooey gooey grilled cheese, you’re going to love this sandwich.

 

Ingredients

2 slice sourdough bread
1/4 c fresh or Bird’s Eye frozen spinach
2 slice Hormel bacon cooked
3 slice smoked deli sliced Gouda cheese
1 slice onion, microwave 1 minute
GARLIC MAYO
2 Tbsp Hellmann’s mayonnaise
1 clove garlic, reserving a few pieces

Instructions

Gather all your ingredients.

Make the garlic mayo.

Spread each slice of bread with the grilled cheese garlic mayo spread, saving pieces of garlic from the spread and put them in the spinach. Set aside.
Mix garlic and spinach.
Heat spinach in microwave until warm.
Add the Gouda cheese, then spinach and then top with bacon. Make sure the grilled cheese garlic mayo spread is on the outside of the sandwich. *Note: No need for butter, you’re using mayo instead.
Add one slice onion that has been heated in the microwave one minute.
Put sandwich in a preheated skillet and grill with the grilled cheese garlic mayo spread on the outside of the sandwich.
Grill until golden on each side.
Serve with some chips and enjoy!
