Need Appetizers? Try Mexican Pinwheels!

Last summer vacation, my family and I flew to Florida to visit my parents.

They had become snowbirds some time ago, and then they just fell in love with the place they lived during the winter so they hardly ever came home. Instead, they would send us plane tickets at least once a year so we could all come and visit them. It was super thoughtful and very generous of them. We missed them terribly…especially the kids. We liked to fly because then we could stay for a long weekend and not miss a ton of work back home. This time when we got there, much to our surprise, there was my brother and his family as well.

They didn’t tell us we were all going to be together. It was very exciting. The first night, we decided to just do a meal at home, because we were all pretty tired from traveling. My mom did most of the cooking. She’s the best at it after all.

When she pulled out these little pinwheel sandwiches, I couldn’t help but sneak one off the plate. They looked just like these sandwiches from the web…and let me tell you…they taste even better than they look!

I think I ate about half of them in one sitting. Good thing Mom had extra ingredients in the fridge to make more!
