When Baking It Once Just Isn’t Enough

It was time for our kick-off to summer block party. It’s one of my most favorite events of the entire year. We get to join up with all of our neighbors and connect after being holed up in our houses all winter long. It’s fun to catch up on everything that has happened since we pretty much shut ourselves off to the world in the fall. I know that the kids have a good time with all the inflatables and other activities that we put together for them. It really is quite the event, and well worth every penny that we spend.

Another guarantee is that there is going to be a good meal served. There is kind of an unwritten competition of who can come up with the tastiest dish. I knew I was going to win with the twice baked potato casserole that I had found on Group Recipes earlier in the year.

I had worked several times to perfect the recipe over the months after I found it, and it was just about as good as it was going to get. Everyone came up and told me how amazing it was and I even had to write down the ingredients and instructions for a few people. I left that party feeling satisfied that I had the best dish… that was now empty!
