Add This Rotisserie Chicken Casserole To Your List Of Regulars

My Uncle recently invited me and my family to his ranch for the weekend to ride horses. We are city people so of course I jumped at the opportunity. My kids didn’t seem so excited about it at first, but I figured they would warm up to the idea when we got there. Horses are so therapeutic and friendly, I could spend the rest of my life living with them near me. When we arrived, Uncle Chuck already had everything all set up for us to hit the ol’ dusty trail. He didn’t have to tell me twice!

That first trip just he and I went. Nobody else in the family was convinced on the idea yet. The following day, I talked everyone else into coming. What else were they going to do all day? Reluctantly, they finally agreed to come along. They were so happy they did. The kids couldn’t stop talking about how much fun they had.

When we got back to the house, my Uncle’s wife was in the kitchen just pulling a casserole out of the oven. That’s when I started to feel not so hot about what was going to happen next. I’m not a huge fan of the recipes usually, but this one from Mom On Time Out was so much different!

Quick Tip: Seasoned bread crumbs, Ritz, or panko works for a topping as well.
