Enchilada Lasagna – Doesn’t That Say It All?

Enchiladas and lasagna… two of my all-time favorite dishes. Enchiladas have always been a little bit easier for me to make than lasagna, so we always had that more at my dinner table. That was true at least until I found this recipe on Julie’s Eats & Treats…. Good Gravy! This was the most amazing thing that had hit my taste buds in a very long time. And truthfully, it wasn’t that hard to put together at all. My kids even helped me and they did a great job. It was fun to have them in the kitchen.

The first time we made this, we followed the directions listed and the ingredients exactly. Now that we’ve had it a few times, I’ve made it a couple of different ways. You can mix up your cheese flavors to match what you have so you aren’t buying something separately at the store and it’s still really good.

Another swap I have done is switching out the chicken for ground beef. My husband isn’t a big fan of chicken breast so he actually prefers it that way. This is a versatile recipe, so feel free to make it your own!
