South-Of-The-Border Mexican Chicken Casserole Inspired By Paula Deen

My kids love every type of Mexican inspired dish I have ever made for them. In fact, I think that they could eat tacos every day of the week and be completely satisfied. I on the other hand, along with my husband, need a little variation in our lives. So, whenever I find a new recipe for something that fits their taste preferences, I think I am more excited to make it than what they are to try it. That was the case when I stumbled upon this little gem on Recipe Lion. It sounded simply amazing!

My kids could smell it cooking in the oven and they started circling around the kitchen. That’s always a pretty good sign that what I’ve found is going to be a winner. This went together so easy, it was already a winner for me.

Everyone really enjoyed it so that was a double bonus. I’ve actually had the kids ask for this instead of tacos, mac and cheese, and even pizza! I don’t mind making it because it’s super affordable, fast, and pretty darn good. My hubby enjoys it too, so it’s a hit among the whole family.
