Mini Chicken Parmesan Bites: A Quick and Easy Weekday Meal

Getting my children to eat anything that doesn’t come out of a box or a can is like winning a championship basketball game. I think it’s because when they were younger, that’s what I usually fed them. It was for convenience more than anything. Boy am I regretting that now. I have to try and introduce all kinds of foods now that they are older that they should have started off eating from the beginning. I have definitely made my job a lot harder for myself I know that much.

I have found that if I can make it into a finger sized food, they are more likely to try it. Things like meatballs or little poppers stuffed with different ingredients they love. When I saw a recipe for mini chicken parmesan on Six Sister’s Stuff, I was really thrilled. I knew I was going to love them, because I already love chicken parmesan.

The real test was giving them to my kids though. What were they going to do? I watched with hopeful anticipation as they all gobbled up everything I had put on their plates. Whew! My husband and I polished off the rest. This is a great family meal that we all love.
