These Breakfast Enchiladas Are to Die For! The Sauce Really Makes Them Sing!

When I walked into work one day, much to my surprise, we were having a community brunch. I didn’t know anything about it. I may have gotten an email on it, but I’m a bit scatterbrained at times and extremely busy. It was a nice surprise either way. There were all kinds of yummy foods that people had brought in. I felt kind of bad that I didn’t bring anything, but everyone reassured me that there was plenty of food to go around and not to worry about it.

When I came upon a casserole dish of enchiladas, I was a bit confused. That’s not really a breakfast food. Delicious, but not a breakfast food. I asked the person behind me in line about it, and she said that she made them from a recipe that she found on All Recipes for breakfast enchiladas.

Well then! That sounded like something I could definitely get interested in. I took a small portion along with the rest of the foods that interested me. This was by far my favorite thing that I had that day. I’ve made them at home several times since then and they always turn out so tasty.
