The Perfect Easter Morning Breakfast

One of my very good friends invited a bunch of us ladies over for a brunch after a morning prayer group recently. It was super nice of her and of course I accepted. Whenever I can get a little bit of extra time in with my friends I’m all for it. It doesn’t happen often, so when it does. I take advantage for sure! She had set out these wrap looking sandwiches for everyone and I assumed that it was like a normal ham or turkey wrap with lettuce and tomato in it.

Nope. I was wrong. It was a potato and ham wrap. It was like breakfast, but not quite breakfast. It looked a lot like this recipe from Spend with Pennies. After I took a bite of it I instantly fell in love.

I knew these were going to be extremely versatile and that’s something I love to work with in the kitchen. With three kids that all like different things, anytime I find something like this it’s just like winning the lottery.

I couldn’t wait to get home and try them out. They were super simple to make. Wraps like these have become a quick staple food at our house.
