This BBQ Bacon Potato Salad Is The Bomb!

This is the ultimate dish to take to BBQ’s and other summer potluck meals. You can bet that there isn’t going to be anyone else that has discovered this beautiful blend of flavors… until you show up with it. Just be prepared to share the recipe time and time again. Ingredients

1 Barbecue Blend BBQ Ready pack from The Little Potato Company

2 tbsp oil

½ cup Hellmann’ mayonnaise

¼ cup Sweet Baby Ray’s barbecue sauce

1 tbsp Heinz white vinegar

1 tbsp water

2 slices bacon, cooked and crumbled

2-4 tbsp green onions, chopped

 

Instructions

Preheat grill to medium-high (about 450 degrees F). Open BBQ Ready pack and, if desired, halve or quarter potatoes. Toss with oil and seasoning pack. Grill potatoes until tender, stirring occasionally (about 25-30 minutes on my grill). Cool to room temperature (or you can serve warm if desired!).

In a small bowl, combine mayonnaise, barbecue sauce, vinegar and water with a whisk until smooth. Add to grilled potatoes along with bacon and green onion and stir until combined. Salt to taste. Serve or refrigerate until chilled.
