This baked arroz con pollo is as amazing as it sounds- you have to take my word for it. I actually took my Spanish language elective a bit seriously. I can still remember that arroz means rice and pollo means chicken. Oh, I was so excited to learn Spanish back then. Imagine knowing how to speak two languages- that’s going to be very handy soon.
