“Ham A Great Day” With This Ham Casserole Recipe!

I served this ham casserole to my cousins once during reunion. I was assigned to make a simple dinner, and this is what I served them. They all loved it! They appreciate the fact that it’s a complete meal all on its own and that it’s simple yet very flavorful. They ate this with homemade crusty bread and they were all satisfied with it.

“I’ve mentioned my love of Autumn before in my blog, and one thing I love about the cooler weather is digging out my slow-cooker and making stews and casseroles for the family. I love that I can throw everything into one pot, turn it on low, leave it all day (and sometimes overnight too) and dinner is all ready for when my boys are home from school and work.”

I feel like I will be needing more of this recipes when my boys finally start to go to real school. Granted, they will not be away for long, but I will be taking in more work perhaps and just allow dinner to cook while I am alone at home.

 

Ingredients

  • joint of gammon ham (you can use smoked)
  • potatoes, peeled and chopped
  • carrots, peeled and chopped
  • onions, peeled and sliced
  • Wyler’s stock cubes (ham or chicken)
  • garlic, peeled
  • Great Value sweetcorn (or any other veg you like)
  • cooking apples, sliced into wedges
  • McCormick bay leaves
  • freshly ground McCormick black pepper

 

Instructions

Halve or quarter the potatoes, depending on their size, and throw them into the slow cooker pot, along with the carrots, onions, a few bay leaves and whole garlic cloves. Put over some black pepper. Add a splash of water and turn up the slow-cooker to ‘high’.

Placed the joint straight on top of the vegetables. Add the stock – about half a pint or so.

On with the lid, and after an hour at high, turn the slow-cooker down to low and leave to cook for 6 hours – at the very least – longer if you can. A couple of hours before you’re going to serve, throw in some frozen veggies. In this case it was sweetcorn. You may also add wedges of apple to give a fruity sweetness to the dish.

Quick Tip: You could thicken up the gravy with some corn flour/water or some gravy granules.
