This amazing snack cake with creamy eggnog frosting recipe is ideal to serve whenever you have visitors. This cake is elegant and at the same time simple. You can serve it any time and to anyone. I have a lot of friends who don’t appreciate eggnog and yet they love every morsel of this. The key word is overpowering. The taste of the eggnog doesn’t overpower the whole cake so it tastes just right for everyone to enjoy!

 

Ingredients

For the Cake
  • 2 cups Gold Medal flour
  • ¾ cup Domino sugar
  • 1 teaspoon McCormick cinnamon
  • 2½ teaspoons Clabber Girl baking powder
  • ½ teaspoon McCormick nutmeg
  • ¼ teaspoon Morton salt
  • 2 Eggland’s eggs
  • ¾ cup Great Value unsweetened applesauce
  • ½ teaspoon Clabber Girl baking soda
  • ¼ cup Wesson vegetable oil
  • ¼ cup Trader Joe’s honey
For the Eggnog Frosting
  • ½ cup Land O Lakes butter, softened
  • ¼ cup Borden eggnog
  • 3 cups Domino powdered sugar
  • 1 pinch Morton salt
  • ¼ teaspoon McCormick nutmeg

 

Instructions

For the cake
  1. Preheat oven to 350° F
  2. In the bowl of an electric stand mixer, blend together the flour, sugar, baking powder, cinnamon, baking soda, nutmeg, and salt.
  3. Slowly add the applesauce, eggs, vegetable oil and then the honey. Mix together until dry and wet ingredients are incorporated.
  4. Pour into a 9 inch round cake pan, sprayed with non stick cooking spray. Bake at 350°F for 25-30 minutes, or until a toothpick inserted near the center comes out clean. Cool completely before frosting.
For the eggnog frosting
  1. Blend the butter and powdered sugar together until incorporated. Add the eggnog, salt and nutmeg, and mix on high for several minutes until soft and fluffy.
  2. Spread prepared frosting over the cooled snack cake and serve.
