Brrrr… The weather gets so chilly up here occasionally that I’m always looking for new and exciting soup recipes to warm me up! It seems I’m going to have to start wearing mittens inside the house and just sit by the fireplace all day long, unless I want to look like Frosty The Snowman. But I would rather beat the cold temperatures by having a wonderful soup for dinner! And I think I’ve found just the right recipe to do so.
When it comes to soups, I am pretty picky. I can’t stand soups that are mild and bland, but right now I would also like to avoid soups that are heavy and creamy. Because, you know, my waistline didn’t like the holidays as much as I did! This recipe is a brilliant choice for the colder months of the year, and thanks to its versatility, also a wonderful option for anyone who is watching their weight!
