Soothe Your Winter Blahs With Wholesome And Healthy Beef Barley Soup

I don’t know about you guys and gals but beef barley soup is one of the best meals you can serve your family on a cold winter’s day. It’s filled with hot and hearty sustenance that truly warms both the belly and soul. What makes this recipe so amazing is that it asks you to use leftover beef from a pot roast or other dinner. So simple! Of course, if you haven’t any leftover beef and wish to still make the soup just go for it! All you need to purchase is a beef roast or cubed beef stew meat. It’s that easy. I’m telling you this is the best recipe to cure cold bones on a winter’s day. You’re going to love this!

Soup it is!  With plenty of leftover pot roast in the fridge, I was psyched to stumble across this long-forgotten recipe that I love.  This is a hearty beef and barley soup with a little twist — a bit of spaghetti sauce in the base to make it thick and rich. It’s also chock full of veggies.  A piece of soft, crusty bread is great for sopping up the rich broth. We had it with ciabatta bread and we all left the table stuffed. If you prefer your soup simpler, you can leave out the canned tomatoes and green pepper and let the meat and barley be the stars (something my kids prefer).  It is great both ways — a hearty, flavorful soup that cooks nicely throughout the day in the crockpot without requiring any attention.- Juggling With Julia
