Winner! Winner! Chicken Dinner! – Enjoy These 7 Mouthwatering Chicken Recipes

I love to garnish this Doritos casserole with salsa and sour cream. Yum!

Check out what my pals over at Cooking Mamas had to say about this recipe:

“This casserole goes together quickly. Simply pick up a rotisserie chicken from your supermarket or use leftover chicken or turkey you have on hand, and you’ll have dinner in under an hour!”

Yes, it sure does! My husband and kids devoured this casserole in about 30 minutes. LOL!

Ingredients

3 c. shredded cooked Tyson chicken

2 c. shredded Kraft Mexican cheese blend (divided)

1 (10 oz.) can Campbell’s cream of chicken soup

1/2 c. TruMoo milk

1/2 c. Daisy sour cream

1 can Ro-Tel diced tomatoes with green chilies drained

1/2 packet Ortega taco seasoning mix

1 lg. bag Doritos

Chopped lettuce (optional)

Diced tomato (optional)

Instructions

Preheat the oven to 350 degrees. In a large bowl, mix together the shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Ro-Tel tomatoes, and taco seasoning mix. Stir well.

Grease a 2-quart casserole dish. Layer half of the crushed Doritos across the bottom of the dish. Top with half of the chicken mixture. Add another layer of crushed Doritos, and then add another layer of the chicken mixture. Top with remaining 1 cup cheese.

Cover and bake for 30-35 minutes, until bubbling hot. Remove from the oven and top with chopped lettuce and diced tomato or more Doritos, if you wish.

Quick Tip: This recipe calls for Doritos but feel free to use any brand of nacho cheese chip that you have on hand.

Thank you to Cooking Mamas for this great recipe.
