How To Make A Healthy, Heartwarming, Belly-Busting Vegetable Soup – It’s Good For You, Too!

Let’s face it; the holidays aren’t exactly the best or easiest time of year to keep an eye on your figure and count calories… But I’ve noticed it’s a good thing to eat lighter for a few days before all those wonderful family dinners. It makes me feel less guilty when I finally dig into all that turkey, chocolate and eggnog!

This is one of my favorite recipes for all those times when I feel like I need something a bit lighter. It’s light, flavorful and surprisingly filling.  This simple soup made of fresh veggies has been called the secret to successful weight loss.

My mom had to lose weight three years ago following a health scare.  After success with Weight Watchers years ago, she tried to find a recipe for soup she remembered loving.  This updated version made with fresh veggies was exactly what she needed. It took a lot of dedication, but my mom still credits what she calls “The Soup” with helping her lose those extra pounds.
