Did You Really Think Your Slow Cooker is Just For Making Dinner?

This apple crisp is so good I just want to hide it from everyone else and eat it all by myself! If you want to cut down on calories, skip the ice cream and caramel drizzle, and serve with low fat whipped cream instead.

 

Ingredients:

 

 1 cup flour
1/2 cup brown sugar
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup butter; cut into pieces
1 cup chopped walnuts
1/3 cup sugar
1 tablespoon cornstarch
1/2 teaspoon ground ginger
1/2 teaspoon Cinnamon
6 cups apples; peeled, cored & chopped
2 tablespoons lemon juice

 

Instructions:

Mix flour, brown sugar, 1/2 c. of white sugar, 1/2 t. cinnamon and nutmeg in bowl. Mix the butter with the flour mixture using fingers or a fork until coarse crumbs form. Stir in walnuts, set aside.

Whisk together 1/3c. sugar, cornstarch, ginger and 1/2 t. cinnamon. Place the apples in a slow cooker and stir in the cornstarch mixture. Toss with lemon juice and sprinkle the walnut crumb on top.

Cover and cook on high for 2 hours or low for 4 hours.

Partially uncover the slow cooker to allow the topping to harden about 1 hour.

Use corn starch dissolved in a 1/4 cup water or flour thinned with water or cold stock. Make sure you shake, whisk or seive out the lumps first.

I use an empty jar with a tight fitting lid. Put in two tablespoons of flour and 1/3 cup cold water. Shake till dissolved. WHISK into the broth while it is cooking. Let simmer till thick…stirring so it will be smooth.
