6. Christmas Eve Stew

 

My family, personally doesn’t have any traditional foods that we eat every Christmas Eve, however, after tasting this stew I think we might just start! Speaking of traditional Christmas Eve meals, my sister’s inlaws always eat clam soup at their grandma’s house. Thank God they are my sister’s inlaws and not mine lol! No disrespect to any of you who like clam soup but I think I’d keel over and die if I had to eat such a thing. Plus, my youngest boy is allergic to shellfish so that would automatically opt us out of that dreadful dinner.

 

My sister assures me the clam soup is very tasty and she enjoys the family tradition and spending Christmas Eve with her husband’s grandparents. So, that’s all that really matters any, right? Right. So, anyway, Christmas Eve stew, it’s dang good and you should try it. Apparently, it got its name due to the red and green colors thata re swimming in it hence the tomatoes and beans. I think it’s a lovely stew and I plan to eat it all winter long. Enjoy!

Quick Tip: If you don’t have a slow cooker, that’s fine. You can make this stew on the stove top, too.

Rich Moist Banana Bread
Preheat oven 350* Grease 2 loaf pans
In a large bowl stir together: 1/2 c. melted butter 1 c. sugar
Add: 2 eggs 1 t. vanilla
Combine in another bowl: 1 1.2 c. all-purpose flour 1 t. baking soda 1/2 t. salt
Stir into butter mixture until smooth.
Fold in: 1/2 c. sour cream 2 banana’s sliced 1/2 c. chopped walnuts
Spread evenly in prepared pan. Bake @ 350* for 60 minutes When toothpick inserted in the middle comes out clean
Cool loaf pan 10 minutes before removing to a wire rack to cool completely.
