This Chicken Sweet Potato Curry recipe brings maximum flavor for minimal effort. Even if you aren’t big on Indian cuisine, you’ll find a lot to like about this dish–and so will the kids! I happen to love curry, but I know that the prospect of eating, let alone cooking, Indian food, may scare some people who have never tried it. India and Southeast Asia aren’t exactly known for holding back on the heat, and I know, when the name of some exotic-sounding dish comes up, there is always that worry, “Is this going to be really difficult?”

Well, fear not!  There is nothing complicated about this recipe, and though it does incorporate a flavorful blend of sweet and savory tastes, along with a couple of aromatic spices, it isn’t going to set your mouth on fire.  It’s also gluten-free, dairy-free, and even Paleo diet friendly, so even if you or your family members have some dietary restrictions, you should be able to incorporate this into your meal plan.  Hey, it only takes about half an hour, so why not give it a try?
